Cherry Delight
16 ounce package frozen pitted dark sweet cherries, about 4 C.
4 T. powdered sugar
2/3 C. half-and-half
1/2 t. almond extract
1/2 t. vanilla extract or cherry flavoring
Finely chop cherries in food processor. Use feed tube to add sugar, 1 T. at a time. Add rest of ingredients and process until well blended. Stop machine to scrape sides of bowl as needed.
Pour mixture into freezer container. Place a piece of plastic wrap directly on surface of mixture. Freeze for 1-1/2 hours or more, until consistency of ice cream.
Makes about 6 1/2 C. servings.
